Many of us, would generally agree that the most natural ways of healthy living is to consume fresh fruits and vegetables.
As a food technologist, I dealt with more refined food ingredients that were extracted from food sources. Refined food extracts exist in the forms of powder, liquid concentrate or in the form of solid concentrate. For example, carrot slices, diced cabbages, fruit concentrate, fruit puree, natural food coloring and flavorings, powdered starches etc.
You might be curious why would anyone go refined these ingredients from natural sources and people like me simply love using them?
1. Easy to Work With
Since they have gone through some sort of processing, I can work with these ingredients easily turning them into desired food products. For example, making fruit juices from fruit concentrate instead of processing fruit into juices. These refined ingredients helps to reduce processing time, and allows speedy delivery to the customers.
2. These Ingredients Last.
A very important factors is that these refined ingredients last longer than the fresh one. Longer lasting ingredient helps the food supply chain to consistently supply and provide food ingredients irregardless of the season. Food manufacturer can opt to purchase, use and store some of these ingredients based on sales forecast rather than the actual order. Unused ingredients can be stored securely for future production as well.
3. A functional ingredients
Believe it or not some of these ingredients contains more vitamins, minerals and other nutrients that the fresh vegetables and fruits have in a single servings. For example, fruit juice concentrate contains more vitamin C than normal fruit juices. Taste the difference. Fruit juice concentrate taste tardier than the normal fruit juices. I love them because they provide concentrated functional ingredients such as vitamin C at an amount where I do not need to eat as much fruits to obtain them.
Refined food ingredients are amazing to work with - they provide functionality and are what made our food today.
