Recently, I have been doing some reflection on why people are so attracted to food consistency. I meant food ingredients can be seasonal and varies on its nutritional value, color and shape.
Why are we holding onto food consistency? Consistent food meant processing. Processing to make the shape, color and taste similar. It is using technology to change its chemical structure or even chemicals additives to preserve the consistency. The switch to natural food additives is on going but is it sufficient to say that it is not damaging our health, feeding something that aren't suppose to be there naturally.
So, the question is do we still need the consistency? Does getting apple juice or orange juice at slightly variable affects customer confidence? As a consumer, we were told color changes might signifies the food turns bad. Similar with the taste. In the food industry, we are sticking to provide consistently similar food quality even it means more processing or chemical additives to prevent the misperception of indelible food.
The only way to reduce this food consistency problem without chemical additives is to make it on your own. You know it is fresh and you know what is added to it. Why it is different? So, the question of inconsistent doesn't exist.
